As a kid, I didn't have the typical American staples all the time. A lot of my meals were classic chinese dishes. One of my favorites growing up was tomato and eggs. And the ingredients are already staples found in your fridge, so you'll have no excuse not to try this!
On days where I'm feeling lazy and want something delicious or am just missing home, I'll make myself a giant bowl and eat it with some rice, another classic asian staple.
This simple dish basically consisted of two main ingredients: tomatoes and eggs. But you'll also need just a couple more things to make it extra tasty.
To make enough for two hearty meals, you'll need:
- 2 tablespoons oil, I used Canola Oil
- 4 medium sized tomatoes
- 4 eggs
- 1 teaspoon of sugar
To start, scramble the eggs in a bowl and chop your tomatoes into bite sized chunks.
Heat your oil in a pan. Then add in the eggs and scramble until mostly firm.
Once the eggs are done. Remove them from the pan and place in a bowl. Set aside while you cook the tomatoes.
Add some more oil to the pan and then add in the chopped tomatoes. Cooked down the tomatoes until the juices start to boil and it's slightly mushy. Add in the teaspoon of sugar and mix together.
Add the scrambled eggs back in and gently mix until everything is incorporated. The eggs should all be coated in the slightly sweet and tangy sauce. Tada! You are now done. It was that simple :) This is great served over rice with some sliced green onions.
I especially love eating a bowl of this eggy-tomatoey goodness on cold winter nights curled up on the couch binge watching Netflix.
I know this might sound like a weird combination to some but you should definitely give this recipe a try! You won't regret it.
